I don't know, a top restaurant, maybe - my boss does like to negotiate custom menus with her restaurants.

Me, for the most part I like stability. Give me a menu of things you know you can provide a reasonably stable quality on, and I'm happy. I don't even like "high-class" restaurants since the few times I did get into one, the servings are so SMALL.

This is no different than omakase and has been around high end Japanese restaurants in LA. I don't know why this is just starting as a new trend.
