JapanGal, almost all of those courses consist of one or two bites of something rather insubstantial, the point being (in many cases) to present the flavor without the food. They aren't serving dozens of hamburgers in one sitting.

What a ridiculous food snob. Best food can be very simple but you must use quality ingredients and cook with a passion. This is a trend for those who think they are sophisticated to show off to their shallow friends.
Follow the trends and make new friends, or lead by the soul and become whole.

John, I do not care about the size actually, but if one gets 40 plates of french fries, that is still a bunch.

The main thing I know about this guy is that he is extremely highly respected among his peers, as well, of course, as by his customers. he's considered an innovator and, simply, an excellent chef. He closed down his hugely successful restaurant to focus on study and research, so he's not in it for the big bucks. Nobody would say that kaiseki ryouri, with its many courses, is guzzling, any more than one of Adria's feasts is. How is getting people to sit, relax and properly appreciate each flavourful morsel they put in their mouth, encouraging obesity?
