French cuisine from Chef Takayoshi Kawai in Higashi Azabu

It’s been awhile since famed chef Takayoshi Kawai has been in the press, but this time he’s not helming a restaurant for someone else. No, this time it’s a namesake venue, Chez Taka, set to open in Tokyo’s Higashi Azabu area on Friday. A trendsetting and globetrotting chef, Kawai has worked his way through Michelin-starred venues in Europe, Canada and the U.S., including a stint as sous chef at San Francisco’s famed Masa’s where he led it to a No.1 ranking for U.S restaurants. He has served at both Queen Elizabeth’s and Emperor Akihito’s state dinners, and has been touted by Michael Jackson, Michael Jordan and other celebrities and VIPs around the world.

For his new venture, chef Kawai has collaborated with M Dining Corp to open Chez Taka — his first restaurant as owner and chef. Using his signature French style and the “farm-to-table” concept, Chez Taka aims to provide a welcoming space with hearty, delicious food where patrons can relax and enjoy some quality time with their friends, family and loved ones.

Chef Kawai will create dishes in the style of a “healthy salad” with fresh organic vegetables, locally sourced and with other wholesome and carefully selected ingredients. His unique, artistic style and his delicate approach to every single fresh ingredient will bring out all of the flavor and texture of his dishes and put the star of the show —natural food — on display. “After living overseas for so many years, I am happy for this opportunity to finally open my own restaurant,” says Kawai. “Every dish that I create and provide will be inspired by delicious vegetables and nature itself that I was blessed with while living in San Francisco.”

The high society image of “French cuisine” may seem a little intimidating to some, but it’s an image that Kawai would like to change. To him, French fare is a lifestyle, one “that provides having a great time with your loved ones by sharing one table and a delicious meal… because that’s what’s most important in life.”
