The Park Hyatt Tokyo will offer a “Parisian” promotional menu at its restaurant Girandole in May. A very special guest chef from Park Hyatt Sydney, Franck Detrait, will present an original modern French lunch and dinner menu using Japanese seasonal ingredients at Girandole for a limited time this spring. His style of French cuisine is classified as “revisited modern traditional”, where he uses modern and traditional cooking techniques.
The inspiration of his menu will be of the flavors from his childhood in Provence, France, and his journey as a chef learning under world-famous chefs such as Guy Pommelet at Concorde St Lazare, Christian Constant at Les Grandes Marches restaurant and Jean-Francois Rouquette from Park Hyatt Paris-Vendôme.
