It's grilling season. After you've grilled your meat, try throwing a few cherry tomatoes on the grill too briefly. This too deepens their natural flavor.

I made "my gazpacho" yesterday and I took the writers hint and roasted the tomatoes.
I was a little worried as I didn't want a "cooked" tomato taste, as gazpacho is meant to be "raw".
But to my surprise they were perfect and gave a decided edge to the overall flavour.
Dare I say "umami up" - ha, ha!
But over-roasting will certainly make tomato soup and not gazpacho.
