Lamb chops aren't exactly ubiquitous or cheap in Japan.What an odd recipe for a Japanese paper to publish. What next? A recipe that uses half a pound of mature Cheddar cheese? One for Treacle tart?

overcook. Cuts of lamb are as follow, 3/4 chop is the cheapest and the fattiest, next are the meat in the photo above "loin chop" still has some nice fat and looks like a very small t-bone and is mid price. Cutlets or rib chops is the top cut of the lamb and the most expensive. Lamb is limit is Japan and has never taken off. This is due to their millennium long dislike of the barbarians who were know eaters of lamb. Lamb in Japan at eateries are something not worth playing with. There is a good chance that the lamb is frozen and have to be defrosted.
