I'm sure the local restaurant and I would have thought different on the edibility of this squid! ;)

He apologized. I love that! And I mean it.

Giant squid are not edible as their flesh has a high ammonia content.

from the headline, i thought the fisherman had beaten the squid into submission or something.

So he took it to the pub, slapped it down on the table, and said to his pal:

Here's that sick squid I owe you!

He only regrets not killing it or cutting off it's legs because he could have made some money...

What a sad and brutal way to die for the innocent squid. Apology deserved, even though post mortem.

The squid, a male weighing 163 kg, died shortly after being pulled to the surface last Wednesday and was trucked to a research institute.

He doesn't regret killing it, he regrets not keeping the corpse in better condition. What he probably means is, he wishes they'd killed it where the injuries don't show, so that they'd got more money for it.

When I saw the headline I was expecting a story about a bloke getting into a fight with a squid...

They said at 8m it was relatively small... if that's small I'd hate to come face to face with a biggie.
