Japan wins World Baking Cup

A team of patissiers from Japan has won this year's World Baking Cup, also known as “The Coupe du Monde de la Boulangerie.”

The international event is held every three years. This year, it was held in France on March 8, drawing many participants from all over the world, including Japan, the United States, Taiwan and South Korea.

The Japanese team consisted of Takuya Sasaki, 41, Yasuo Hatanaka, 42, and Yuki Osada, 32, all from Kanazawa. Their winning entry was a pastry based on the image of a crane flapping its wings. The theme was a “bonds.”

Hatanaka commented, “I heard that cranes are birds that have close bonds. We wanted to reflect the strong bonds of our team and also to show that Japan was bonding together after last year's disaster.”

Congratulations to this team. My daughter is a pattisiere in Tokyo and I know how much time and effort is put into becoming skilled. Well done.

These bakers must be doing something right, congratulations. As a general rule, Japanese pastery is not sweet enough for my taste.

I sort-of agree with you, Riffraff, but I would say it's not rich enough, rather than not sweet enough. Cheescake should not be fluffy. The technical level is quite high though.

You are right also, most of the cakes and pastery are good but not great. I think it is getting better though, maybe the pallets of the japanese are becoming corrupted to double chocolate fude brownies.

The technical level of japanese pattisiere is the best around the world. i've lived enough time in France and of course french pattisiere is top as well, but it is a property of the japanese to do everything as possible to improve a product
