I don't know if "thinner" means that it's better. My parameter is one, and only one: do I feel safe when I enter my credit card number in this or that OS? Answer: there's only one OS that is secure enough.

But Apple claim that the existing retina display's pixels are too small for the eye to distinguish, so how can they improve the image quality any more?

It is nothing related to pixels, but to opacity: less glass layers mean more sharpness.

While I always appreciate new technology, is 1/2 mm difference in phone size thickness really newsworthy? How many people would even be able to notice the difference?

They are finally going 16/9. Welcome to the 21st century apple, even my 6 year old phone had that.
Now Samsung can sue apple for violating it's design, since samsung has 16/9 screens on sleek phones.
