Autumn dining promotions at Park Hyatt Tokyo

The Park Hyatt Tokyo will feature promotional menus at its dining venues this autumn.

■ New York Grill: Guest Chef, Bryce Shuman from Betony (NYC)

New York Grill is pleased to welcome Executive Chef Bryce Shuman from New York’s critically acclaimed restaurant and bar, Betony. Chef Shuman was named a 2015 Food & Wine “Best New Chef” and Betony received a Michelin star in both 2015 and 2016. During this promotional period, diners will get to experience a dinner menu of inventive American cuisine from this very special guest chef. The menu at Betony is inspired by familiar flavor combinations of the food Chef Shuman enjoys to eat but is presented in a modern and innovative way.

Chef Bryce Shuman had an international upbringing from his mother’s travels as a cultural anthropologist and was exposed to a variety of exotic delicacies from a very young age. He pursued a culinary career and worked beside Chef Daniel Humm, chef and co-owner of the famous New York restaurant, Eleven Madison Park, for six years. In 2013, he opened Betony with fellow former Eleven Madison Park colleague and now General Manager of Betony, Eamon Rockey. Savor this edition of the award-winning restaurant’s menu using fresh, seasonal Japanese produce at New York Grill for a limited time this October.

■ Kozue: Tohoku Heroes - Yamagata Odyssey

This autumn, Kozue welcomes you to experience an authentic Japanese menu concentrating on a variety of Japanese seasonal vegetables and produce from the mountains and sea of Yamagata Prefecture. For this rendition of Kozue’s culinary tour of Tohoku, Chef de Cuisine, Kenichiro Ooe will source locally grown produce from his birth town of Yamagata Prefecture, which is still home to over 150 traditional Japanese vegetables. His home-style dishes will vshowcase seasonal vegetables such as turnip, pumpkin and an assortment of mushrooms with Yamagata jidori chicken, Yonezawa beef and sangen pork. The menu also pairs perfectly with a selected range of Japanese sake and wine from the Tohoku region.

■ Girandole: New French-Inspired Menu

Girandole is pleased to introduce a new French-inspired menu this season that will utilize sustainable seafood and local, seasonal produce to align with Hyatt’s global philosophy of “Thoughtfully sourced. Carefully served.” The seasonal menu will include brasserie favorites such as escargot, bouillabaisse and moules marinières, bringing back classic flavors to the brasserie as well as chefs preparing crêpe suzette tableside.

Time: 5 p.m. to 9:30 p.m. (Last order is at 9:30 p.m.) Price: Bouillabaisse, ¥4,300 Escargot, ¥2,600 Moules marinières, ¥3,000 Crêpe suzette, ¥2,000 (All prices are subject to tax and service charge)

■ The Peak Lounge: Signature Afternoon Tea

The Peak Lounge presents the Signature Afternoon Tea menu, showcasing the most popular items of Park Hyatt Tokyo this autumn. The signature items include a delicate mini Paris-Brest from Girandole, the rich and decadent New York cheesecake from New York Grill and the enticing opera cake from the Pastry Boutique.

Price: Noon to 2 p.m. on weekdays with no tray service, ¥2,000 per person 2 p.m. to 5 p.m. (from noon on weekends and holidays), ¥4,000 per person *All prices are subject to tax and service charge.
